Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Boil and mash the potatoes.

  2. Season with salt and pepper.

  3. Form the mixture into balls.

Brush and bake

  1. Brush the balls with the beaten egg yolk while hot.

  2. Grease a baking pan with butter.

  3. Bake in a 400°F (200°C) oven for 5 to 10 minutes until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Starch gives the puffs their body and a soft, tender interior.
Egg
Beaten egg brushed on the surface promotes browning and a glossy finish.

The step that matters

Bake until browned. Browning happens quickly at this oven temperature, so the puffs can scorch on the outside before the centre is heated through. Check them near the start of the 5 to 10 minute window.

Swap the potato

How well each one fits the dish's main ingredients (pepper, egg, butter):

  1. Capsicumfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against pepper, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
