Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the frozen mixture to a smooth, firm texture rather than large ice crystals.
Sugar
Sweetens the base and lowers the freezing point, keeping the sherbet scoopable.
Banana pulp
Adds banana flavor, body and natural sweetness to the frozen base.
Lemon juice
Adds acidity that brightens the banana flavor and balances the sugar.

The step that matters

Soaking the gelatin. Gelatin must be softened in cold water first so it dissolves evenly when added to the hot syrup. Added dry or unevenly, it can leave specks or clumps and a grainy texture in the frozen sherbet.
