Why it works: Sugar and gelatin are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 2,778 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatin
- Sets the liquid into a firm, wobbly structure as it chills.
- Egg whites
- Whipped into foam, they lighten the texture and give the sponge its airy body.
- Sugar
- Sweetens the pineapple and softens the set, balancing its tartness.
- Grated pineapple
- Supplies the main flavor and liquid that the gelatin sets.
- Lemon juice
- Adds acidity that brightens the pineapple flavor.
The step that matters
Folding in the egg whites. Stiffly beaten whites trap air, which gives the sponge its lightness. Stirring them vigorously or letting the mixture get too cold or set before folding can deflate the foam and leave a dense result.
