Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter together and help the fritters hold their shape.
Flour
Adds body to the batter so it holds together rather than running.
Well mashed potatoes
Provide the bulk and moisture that make the fritters soft inside.
Lard
Fries the cakes, adding richness and helping them brown.

The step that matters

Keep the batter thick enough. A batter that is too thin spreads out in the hot lard instead of forming cakes that hold their shape. A thicker batter keeps each spoonful compact so it fries evenly.

Swap the potato

How well each one fits the dish's main ingredients (egg, milk, flour):

  1. Arrowrootfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against egg, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
