What each ingredient does

Rich puff paste
Bakes into a flaky, layered shell that holds the filling.
Large fresh oysters
Provide the main filling, becoming tender when gently stewed.
Hard-boiled egg
Adds body and richness to the filling as it is grated in.
Butter
Adds fat for richness and a smoother mouthfeel to the filling.
Oyster liquor
Keeps the oysters moist and carries flavour into the filling.

The step that matters

Stew the oysters gently and only briefly. Oysters toughen and shrink when overcooked, so they should stew just until they firm and curl at the edges, then cool.

Swap the mace

How well each one fits the dish's main ingredients (oyster, clove, nutmeg, egg, butter):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against oyster, clove, nutmeg, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
