Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavour and texture of the sauce.
Butter
Adds richness and fat, giving the sauce a smooth mouthfeel.
Milk
Forms the liquid base that carries the oyster flavour.
Flour
Thickens the sauce as it heats and comes to a boil.
Lemon juice
Adds acidity that brightens the rich, briny flavour.

The step that matters

Dust in flour and bring to a boil. Flour needs to be well mixed in and heated to a boil so its starch swells and thickens the sauce evenly without lumps or a raw floury taste.

Swap the mace

How well each one fits the dish's main ingredients (oyster, lemon, butter, milk, flour):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against oyster, lemon, butter, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
