Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the hot milk and give the pudding its body.
Egg yolks
Enrich the custard and help it set when baked.
Egg whites
Whip into a stiff meringue that bakes to a golden, airy topping.
Milk
Softens the crumbs and forms the custard base with the eggs.
Powdered sugar
Sweetens the meringue and dissolves smoothly into the whipped whites.

The step that matters

Beat the egg whites until stiff before adding the sugar. Egg whites only hold air when whipped to stiff peaks, and sugar added gradually helps stabilise the foam. Under-whipped or deflated whites will make a flat topping that weeps and browns unevenly.

Swap the lemon

How well each one fits the dish's main ingredients (milk, bread, egg, sugar, butter):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well
  4. Lemonthe original

Fit is the average pairing score against milk, bread, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
