Geape Jam

Ingredients

Directions

Prepare the grapes

  1. Separate the skin from the pulp of the grapes, keeping them in separate dishes.

  2. Place the pulp in a preserving kettle with ½ cup of water.

  3. Heat the pulp thoroughly, then run it through a colander to separate the seeds.

  4. Add the skins to the pulp and weigh the mixture.

Cook the jam

  1. For each pound of fruit, add ¾ pound of sugar and just enough water to prevent burning.

  2. Cook slowly for 45 minutes.

What each ingredient does

Grapes
Provide the fruit pulp and skins that form the body and flavor of the jam.
Sugar
Sweetens the jam and helps it set into a thick, spreadable texture.

The step that matters

Cook slowly for 45 minutes. Cooking gently over low heat lets the pectin and sugar concentrate and set the jam while reducing the risk of scorching, which would give a burnt taste.
