Lemon Cream Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. In a saucepan, mix the egg yolks, water, sugar, lemon juice, lemon rind, and cornstarch.

  2. Heat the mixture over medium heat until it comes to a boil, stirring constantly.

  3. In a separate bowl, beat the egg whites until soft peaks form, then gradually add a little sugar.

  4. Spread the beaten egg whites over the pie filling.

  5. Place the pie in a 400°F (200°C) oven to brown the meringue.
