What each ingredient does

Rice
Forms the body of the pudding as it cooks in the milk.
Milk
Cooks with the rice to create the creamy, soft base.
Egg yolks
Enrich the pudding and help it set into a custard-like texture.
Egg whites
Whipped and spread on top, they brown and give a light, set topping.
Sugar
Sweetens the pudding and helps the yolks blend smoothly.

The step that matters

Brown the egg white topping. Egg whites need to be beaten into a stable foam and baked only until lightly browned; overbaking can make them dry and rubbery, while underbaking leaves them soft and runny.

Swap the raisin

How well each one fits the dish's main ingredients (milk, rice, egg, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Raisinthe original

Fit is the average pairing score against milk, rice, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
