What each ingredient does
- Oysters
- Provide the main flavor and tender, briny filling inside the crisp coating.
- Eggs
- Act as a binder that helps the cracker crumbs adhere to the oysters.
- Rolled cracker crumbs
- Form a crisp, golden coating that browns when fried.
- Butter and lard
- Conduct heat for frying and add richness and browning to the coating.
The step that matters
Fry in very hot fat. If the fat is not very hot, the coating absorbs oil before it sets, producing greasy, soggy oysters. Very hot fat sets the crumb crust quickly, keeping the oyster inside tender and the coating crisp.
