What each ingredient does

Porterhouse roast
Provides the meat that browns and becomes tender during slow, covered cooking.
Suet
Renders fat that browns the roast and carries flavor into the pot.
Onion or tomato
Adds aromatic sweetness and acidity that flavor the gravy as it cooks.
Flour
Thickens the cooking liquid into a gravy as starch swells with heat.

The step that matters

Keep the pot covered and cook slowly. Low, covered cooking keeps moisture in the pot and breaks down the connective tissue in the roast, so it turns tender rather than dry and tough.

Swap the onion

How well each one fits the dish's main ingredients (flour, pepper):

  1. Arrowrootfits better
  2. Okrafits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
