Ice Cream Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the sugar and butter until light and fluffy.

  3. Add the water and mix well.

  4. In a separate bowl, combine the corn starch, flour, and baking powder.

  5. Gradually add the dry ingredients to the wet mixture, stirring until smooth.

  6. In another bowl, beat the egg whites until stiff peaks form.

  7. Gently fold the egg whites into the batter.

  8. Add almond extract to taste and mix gently.

Bake

  1. Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff peaks, they trap air that lightens the cake's crumb.
Butter
Creamed with sugar, it adds fat that gives the cake tenderness and richness.
Sugar
Creamed with butter, it sweetens the cake and helps it brown.
Flour
Provides the main structure that sets as the cake bakes.
Baking powder
Releases gas in the batter, helping the cake rise in the oven.
Corn starch
Softens the crumb and makes the cake more tender than flour alone.

The step that matters

Folding in the egg whites. Whipped egg whites hold air that gives the cake its lift. Stirring them vigorously deflates the foam, so fold gently and stop once no white streaks remain.
