Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Cream the butter and sugar together in a bowl.

  2. Add the grated lemon rind and the egg yolks to the mixture and mix well.

  3. Stir in the cream and the strained lemon juice.

  4. Pour the mixture into a pie crust.

  5. Bake in a slow oven at 300°F (150°C) until set.

Top with meringue

  1. Whip the reserved egg whites.

  2. Spread the whipped whites over the pie for meringue.

  3. Return to the oven until the meringue is lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the filling as they set, and whites whip into the meringue topping.
Sugar
Sweetens the filling and helps stabilize the whipped egg white meringue.
Lemon juice
Provides the acidity that gives the filling its tart flavor.
Butter
Adds richness and tenderness to the filling.

The step that matters

Bake the filling until just set. Egg yolks thicken as they heat, but overbaking makes the custard weep and turn grainy or watery. Baking at a slow oven temperature sets it gently.
