Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓
Lemon Pie
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the filling
Preheat the oven to 350°F (175°C).
Juice the lemon and mix the juice with sugar.
Beat the eggs in a bowl and add the lemon-sugar mixture.
Dissolve the flour in a little cold water and add it to the mixture.
Stir in the boiling water gradually.
Bake and top
Pour the mixture into pie crusts and bake until set.
Whip the reserved egg whites and spread them on top of the pies.
Return to the oven until the meringue is lightly browned.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Thicken the filling as they set and add richness and structure.
- Sugar
- Sweetens the filling and balances the sharpness of the lemon juice.
- Flour
- Thickens the filling so it sets into a sliceable custard.
- Lemon
- Provides the acidity and bright lemon flavour of the filling.
The step that matters
Return to the oven until the meringue is lightly browned. Meringue can turn from golden to dark quickly, and over-browned sugar becomes bitter. Watching for a light golden colour keeps the topping sweet while the sugar caramelises.
