Why it works: Lemon and angelica match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 189 recipes. Both carry (e,e)-2,4-decadienal, which smells fatty, deep fried. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the juice mixture into a light, wobbly structure once chilled.
Egg whites
Whipped to stiff foam, they lighten the mixture and give it a airy, spoonable texture.
Grape juice
Provides the main flavour and liquid base of the dessert.
Sugar
Sweetens the juice and balances the tartness of the lemon.
Lady fingers or sponge cake
Forms a soft, absorbent base lining the glasses.

The step that matters

Fold the egg whites into the chilled gelatin. Gelatin begins to set as it cools, so if the mixture is too cold or too thick the whites will not fold in evenly and the foam will collapse. Fold gently and stop once the mixture holds its shape.

Swap the grape

How well each one fits the dish's main ingredients (gelatin, lemon, sugar, egg, cream, angelica):

  1. Vanillafits better
  2. Orangefits better
  3. Raspberryfits better
  4. Grapethe original

Fit is the average pairing score against gelatin, lemon, sugar, egg, cream, angelica. Candidates are from the same food group and used in at least 100 recipes.
