Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw potatoes
Provide the starchy bulk that gives the pancakes their body and crisp-edged texture.
Flour
Binds the grated potato into a stiff batter that holds its shape in the pan.
Egg yolks
Add richness and help bind the batter together.
Egg whites
Whipped air folded in gives the batter lightness.
Milk
Adds moisture and softness to the batter.
Lard
Conducts heat in the pan and promotes browning and a crisp surface.

The step that matters

Gently fold in the beaten egg whites. Beaten egg whites hold air bubbles that lighten the batter. Stirring hard or too long collapses those bubbles, leaving denser pancakes.

Swap the potato

How well each one fits the dish's main ingredients (milk, egg, flour):

  1. Arrowrootfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against milk, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
