What each ingredient does

Lemon gelatine
Dissolves in boiling water and sets as the pudding's firm, jelled structure.
Grape nuts
Cereal crumbs that absorb the gelatine liquid and add a grainy, chewy texture.
Raisins or dates
Add chewy texture and natural sweetness throughout the set pudding.
Chopped walnuts
Add crunch and a toasty, nutty flavor against the soft set gelatine.

The step that matters

Mix well and pour into molds. Stir the grape nuts, fruit and walnuts through the gelatine while it is still liquid so they distribute evenly. Once it begins to set, the pieces stay clumped and the pudding comes out uneven.

Swap the grape
