Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Sift and measure the sugar and flour.

  3. Sift the flour four times.

Make the batter

  1. Beat the egg whites to a foam, add the cream of tartar, and beat until very stiff.

  2. Beat the yolks until light and lemon colored. Add the sugar and beat again.

  3. Gently fold in the beaten egg whites.

  4. Fold in the flavoring.

  5. Fold in the flour.

Bake and cool

  1. Pour the batter into an ungreased tube pan.

  2. Bake for 30 to 40 minutes.

  3. Invert the pan to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, and yolks add richness and structure.
Sugar
Sweetens the cake and helps stabilize the egg foam and tenderize the crumb.
Cream of tartar
Acidifies the egg whites, stabilizing the foam so it holds its volume.
Pastry flour
Provides light structure with low gluten for a tender, delicate crumb.
Lemon rind or vanilla
Adds aroma and flavor to the cake.

The step that matters

Gently fold in the beaten egg whites. The whites are what make this cake rise. Folding gently keeps the trapped air from collapsing, so the batter stays light and the cake bakes up tall rather than dense.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, cream, flour):

  1. Raisinfits better

Fit is the average pairing score against egg, sugar, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
