Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter and sugar until light and fluffy.

  2. Add one egg at a time, stirring for five minutes after each addition.

  3. Sift the flour and baking powder together three times.

  4. Add the lemon rind to the flour mixture and beat lightly.

Bake

  1. Pour the batter into two layer cake pans.

  2. Bake at 350°F (175°C) until golden and a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet butter
Creams with sugar to trap air, giving the cake a light, tender body.
Powdered sugar
Sweetens the batter and helps the creamed butter hold air for lift.
Flour
Forms the cake's structure as its proteins set during baking.
Baking powder
Releases gas in the oven, causing the batter to rise.
Eggs
Add structure, richness and moisture, and help bind the batter.

The step that matters

Adding the eggs one at a time. Each egg must be fully blended before the next goes in. Eggs added too quickly can curdle the creamed butter and sugar, breaking the emulsion and weakening the batter's ability to hold air.

Swap the lemon

How well each one fits the dish's main ingredients (butter, sugar, flour, egg):

  1. Raisinfits better

Fit is the average pairing score against butter, sugar, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
