Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Beat the eggs and brown sugar until light.

  2. Add the spices and grated chocolate.

  3. Blanch the almonds, chop them, and finely cut the citron.

  4. Mix the almond and citron with the flour and baking powder.

  5. Combine the two mixtures.

Shape and bake

  1. Roll out on a floured board and cut into strips 3½ inches long.

  2. Bake in shallow buttered pans at 350°F (175°C) for 10 to 15 minutes.

What each ingredient does

Eggs
Bind the batter and give it structure as they set in the oven.
Brown sugar
Adds sweetness and moisture, and helps the sticks brown during baking.
Flour
Forms the main structure of the dough so the strips hold their shape.
Baking powder
Releases gas in the dough to lift it and give a lighter crumb.
Almonds
Add texture and richness, with a crunchy bite against the soft dough.
German sweet chocolate
Adds flavour and fat, melting slightly to enrich the dough.
