What each ingredient does

Egg yolks
Form the creamy, rich base of the filling once mashed with the other ingredients.
Melted butter
Adds fat and richness, giving the yolk filling a smooth, silky texture.
Mustard
Adds sharp, pungent flavor that balances the richness of the yolks.
Vinegar
Adds acidity that brightens the filling and cuts through the richness.

The step that matters

Mix the yolk mixture thoroughly. Yolks must be fully blended with the butter, mustard and vinegar so the filling is smooth and evenly seasoned. Lumps of yolk or unmixed liquid leave the filling grainy and unevenly flavored.

Swap the mustard
