Lemon Meringue

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine lemon juice, lemon rind, milk, crushed crackers, sugar, and egg yolks.

  3. Pour the mixture into a prepared pie crust.

Bake and top

  1. Bake until set, about 25-30 minutes.

  2. Whip the egg whites until stiff peaks form and spread over the top.

  3. Return to the oven and bake until the meringue is golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken and enrich the lemon filling as they set when heated.
Egg whites
Whipped into a stable foam that forms the airy, browned meringue topping.
Lemon juice
Provides the sharp acidity that balances the sweetness of the filling.
Sugar
Sweetens the filling and helps stabilize the whipped egg whites.
Milk
Adds liquid and creaminess to the custard-style filling.

The step that matters

Whip the egg whites to stiff peaks and spread the meringue over the top. Whites beaten to stiff peaks hold their shape and trap air, so the meringue rises and browns evenly. Spreading it fully over the filling helps it seal to the crust, reducing shrinking and weeping.
