Escalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. Butter a baking dish.

Layer and bake

  1. Cover the bottom with a layer of finely rolled crackers.

  2. Add a layer of oysters on top of the crackers.

  3. Continue alternating layers of crackers and oysters until you have three or four layers, finishing with crackers on top.

  4. Sprinkle each layer with coarse sea salt, black pepper, and bits of butter.

  5. Moisten the layers with a mixture of oyster liquor and milk, then add butter on top.

  6. Bake for about 45 minutes.

What each ingredient does

Oysters
Provide the main filling and their briny flavor that defines the dish.
Crackers
Absorb liquid and soften into a binding layer that holds the dish together.
Oyster liquor
Adds concentrated oyster flavor and moisture to the layers.
Milk
Moistens the layers and adds richness as it bakes.
Butter
Adds fat for richness and helps the top brown during baking.

The step that matters

Moistening the layers. Crackers soak up liquid unevenly if it is poured too fast or unevenly, leaving dry pockets or a soggy base. Adding the oyster liquor and milk gradually across the layers lets the crackers absorb it evenly and keeps the dish moist as it bakes.
