Stewed Beef
Ingredients
Directions
Cut off the thin part of the Porterhouse steak before slicing.
Cover the steak with boiling water in a pot.
Cook until the meat is perfectly tender, seasoning when two-thirds cooked.
Ensure the water is completely cooked away to retain the sweetness of the meat.
Recipe from a historical cookbook (Internet Archive).
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
