Pickled Eggs

Ingredients

Directions

  1. Boil as many eggs as you wish until hard.

  2. Place the boiled eggs in cold water until you can remove the shells carefully.

  3. Lay the eggs in wide-mouthed jars.

  4. Pour scalding vinegar over the eggs, seasoned with whole pepper, allspice, and ginger root or your preferred spices.

  5. When the mixture is cold, cover the jars closely.

  6. Let the eggs sit for a month before using.

  7. These pickled eggs make a nice relish for cold meats.
