Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the onions and boil them with the skins on in salted water for 1 hour, changing the water once or twice.

  2. Remove the onions and let them dry on a cloth.

Bake

  1. Wrap each onion in buttered tissue paper, twisting the top to seal it, and bake in a 350°F (175°C) oven for nearly 1 hour.

Finish and serve

  1. Once tender, remove the skin, brown the onions by basting with butter, and season with pepper and salt.

  2. Pour melted butter over the baked onions before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Long boiling and baking soften the flesh, making it tender and sweet.
Butter
Adds fat that carries flavor and helps the onion surface brown when basted.

The step that matters

Basting the onions to brown them. Butter is fat that transfers heat across the surface, and its milk solids brown, so the onions colour only if they are basted while hot and tender.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
