Ingredients

Directions

  1. Preheat a pot of water to boiling.

  2. Grease a small tin bucket or mold with lard.

  3. Dust the inside of the mold with flour.

  4. Add the mashed sweet potatoes and a little butter to the mold.

  5. Tie the bag, leaving room for the pudding to swell.

  6. Place the mold in the boiling water, ensuring it floats.

  7. Add more boiling water if necessary.

  8. Put a small plate or tin in the bottom of the kettle to prevent sticking.

  9. Turn the pudding often while it cooks.

  10. When done, plunge the mold into cold water, turn it out quickly, and serve immediately.
