Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Egg whites
Folded in beaten to add lift and an airy, light structure.
Egg yolks
Add richness and moisture, and help bind the batter.
Flour
Provides the main structure that sets as the cake bakes.
Baking soda
Reacts with the batter to produce gas, helping the cake rise.

The step that matters

Folding in the beaten egg whites. Egg whites hold air only when beaten and handled gently. Overmixing deflates the foam, so the cake bakes denser and rises less.
