Lemon Jelly Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the milk and mix well.

  4. In a separate bowl, combine the flour and baking powder.

  5. Gradually add the dry ingredients to the wet mixture, mixing until smooth.

  6. Beat in the eggs one at a time until fully incorporated.

  7. Pour the batter into prepared cake pans and bake for 25-30 minutes or until a toothpick comes out clean.

Make the lemon jelly

  1. For the jelly, combine the grated lemon rind, lemon juice, ⅔ cup sugar, 1 egg, and cold water in a saucepan.

  2. Stir over medium heat until it boils, then remove from heat and let cool.

Assemble

  1. Once the cake layers are cool, spread the lemon jelly between them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as the cake sets in the oven.
Butter
Adds fat and tenderness to the crumb through creaming with sugar.
Flour
Provides the structure that holds the cake together as it bakes.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Sugar
Sweetens the cake and helps create a tender texture.
Lemon juice
Adds acidity and bright lemon flavour to the jelly filling.

The step that matters

Stir the lemon jelly until it boils. The egg and sugar mixture thickens as it heats and must reach a boil to set properly. Stirring over medium heat keeps the egg from scrambling on the bottom of the pan, and the jelly firms as it cools.

Swap the lemon

How well each one fits the dish's main ingredients (butter, sugar, milk, flour, egg):

  1. Vanillafits better

Fit is the average pairing score against butter, sugar, milk, flour, egg. Candidates are from the same food group and used in at least 100 recipes.
