Bakers' Lemon Snaps

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the sugar and lard.

  3. Add the hartshorn and eggs, mixing well.

  4. Gradually incorporate the flour and lemon flavoring until a dough forms.

  5. Roll the dough thin and cut it into small, round cakes.

Bake and cool

  1. Place the cakes on a baking sheet and bake until lightly golden.

  2. Allow to cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the dough and helps the cakes brown and crisp as they bake.
Lard
Adds fat that shortens the dough, giving a tender, crumbly texture.
Hartshorn
Releases gas as it heats, lightening the cakes and helping them rise and crisp.
Eggs
Bind the dough and add structure and richness.
Flour
Provides the main structure that holds the dough together.
Lemon flavoring
Adds a bright lemon aroma to the baked snaps.

The step that matters

Roll the dough thin and cut it into small, round cakes.. Thin, small cakes bake through evenly and dry out enough to turn crisp. Thick or uneven pieces stay soft in the centre and may brown unevenly.
