Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Soaked and cooked, it thickens the milk into a smooth, soft cream.
Milk
Forms the liquid base that the tapioca swells in and cooks into a cream.
Egg yolks
Enrich the cream and help it set into a soft custard-like texture when cooked.
Egg whites
Beaten and folded in after cooking to lighten the cream's texture.

The step that matters

Cooking until smooth. Tapioca starch must be cooked fully in the hot liquid to swell and thicken. Heating the egg yolks gently while stirring keeps them from scrambling, so the cream stays smooth rather than grainy or lumpy.
