What each ingredient does

Isinglass
Sets the cream into a soft, sliceable body as it chills, similar to gelatin.
Heavy cream
Provides richness and a smooth, creamy texture.
Apricot or raspberry jam
Adds fruit flavor and sweetness beneath the cream layer.

The step that matters

Let the cream cool slightly before pouring. Very hot cream can melt into the jam and blur the layers, and it would take longer to set. Cooling it slightly keeps the jam layer distinct and lets the cream firm up cleanly when chilled.
