Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable structure as it cools.
Egg yolks
Thicken the mixture and add richness when gently heated.
Egg whites
Add airy lightness and a softer, foamy texture to the set cream.
Sugar
Adds sweetness and balances the sharpness of the lemon.
Lemon juice or citric acid
Adds bright acidity and fresh lemon flavor.

The step that matters

Stir in the beaten egg yolks slowly. Adding hot yolks too quickly can scramble them into lumps. Adding them slowly while stirring and letting the mixture cool first helps them blend smoothly and thicken it evenly.

Swap the lemon
