Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Provides the gel structure that lets the jelly set firm once chilled.
Sugar
Adds sweetness and balances the sharpness of the citrus juice.
Lemons
Supply tart acidity and aroma that give the jelly its bright flavour.
Orange
Adds additional juice, sweetness and fruity aroma alongside the lemons.

The step that matters

Dissolve the gelatine fully before adding the juice and sugar. Gelatine must be completely dissolved in the water to set evenly; undissolved granules create weak spots and a grainy texture. Sugar should also dissolve fully so the jelly sets clear and smooth.
