To Can Fruit
Ingredients
Directions
Scald the fruit in a large kettle with juice or water to cover it.
Boil the cans and tops in a vessel of cold water until hot.
Fill the hot cans with the hot fruit.
Let the cans remain open until cool.
Cut tissue paper to the size of the can and place it over the fruit.
Fill with juice and seal the can.
To seal preserves, beat the egg white and dip the tissue paper into it, wetting both sides.
Cover the jar with the tissue paper, pressing it securely around the sides.
