Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Beat the egg whites until very light.

  2. In a separate bowl, gradually add the sugar to the egg yolks and mix well.

  3. Add lemon juice to the yolk mixture to taste.

  4. Gently fold the beaten egg whites into the yolk mixture.

Bake and serve

  1. Bake in a hot oven at 400°F (200°C) until set.

  2. Serve immediately to prevent it from falling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, while the yolks add richness and structure as they set.
Sugar
Adds sweetness and helps stabilize the yolk mixture and whipped whites.
Lemon juice
Adds acidity that brightens flavor and helps keep the whipped egg whites stable.

The step that matters

Gently fold the beaten egg whites into the yolk mixture. Whipped egg whites hold air bubbles that make the soufflé rise. Vigorous stirring deflates them, so the batter loses lift and bakes flat and dense.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
