Cream Cakes

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. In a saucepan, combine the milk and butter over medium heat.

  2. Once the mixture is boiling, stir in the flour.

  3. Continue stirring constantly until the dough pulls away from the bottom of the pan.

  4. Remove from heat and add the eggs, mixing well.

Bake and fill

  1. Pour the batter into buttered pans and bake at 400°F (200°C) until golden.

  2. Once baked, cut open and fill with lemon cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Add structure and richness, and help the batter puff and set as it bakes.
Flour
Forms the starch and gluten network that gives the dough its body.
Butter
Adds fat for tenderness and flavor, and helps the dough stay soft.
Milk
Provides liquid that turns the flour into a dough and adds browning and flavor.

The step that matters

Cooking the dough until it pulls away from the pan. Stirring until the dough pulls away from the pan cooks the flour starch and drives off excess moisture, so the dough can hold air and puff in the oven rather than turning soggy.
