Why it works: Sugar and lemon are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 53,532 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓

Soak the isinglass in cold water until it dissolves.
In a pot, combine the water, Madeira wine, sugar, and lemon juice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Isinglass
- Gelatin-like protein that sets the liquid into a firm jelly as it cools.
- Sugar
- Adds sweetness and body to the jelly.
- Lemon juice
- Adds acidity that brightens the flavor and balances the sugar.
- Madeira wine
- Adds aroma and flavor to the liquid base.
The step that matters
Skimming during the boil. Scum rising during gentle boiling contains impurities that would cloud the jelly and spoil its clarity. Removing it keeps the finished jelly clear.
Swap the lemon
How well each one fits the dish's main ingredients (madeira wine, sugar):
- Vanillafits better
- Raisinfits better
- Applefits about as well
- Lemonthe original
Fit is the average pairing score against madeira wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
