Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Adds sweetness and, once frozen, keeps the texture softer by lowering the freezing point.
Cream
Provides fat for richness and a smooth, creamy body.
Lemon juice
Provides acidity that gives the dessert its bright, tart flavor.
Lemon peel
Contributes aroma from the citrus oils held in the peel.

The step that matters

Let the mixture stand for 2 hours. Standing gives the sugar time to dissolve fully into the cream and lemon juice, and lets the citrus oils from the peel flavor the liquid. Skipping this rest can leave a grainy texture and a weaker lemon flavor.

Swap the lemon
