What each ingredient does

Oysters
Provide the main flavor and tender texture of the dish.
Butter
Enriches the sauce and carries flavor into the roux.
Flour
Thickens the sauce when cooked with butter to form a roux.
Fresh milk
Forms the creamy liquid base that gives the sauce body.
Egg yolks
Add richness and further thicken the sauce when gently heated.

The step that matters

Stirring in the egg yolks. Egg yolks thicken through gentle heat and can curdle if the sauce is too hot. Removing the pan from heat before adding them keeps the sauce smooth and creamy.

Swap the nutmeg
