Why it works: Celery and carrot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Barley Soup
Ingredients
Directions
Prepare the barley
Wash the barley in cold water.
Cook the barley in 1 quart of boiling salted water until tender, about 2 hours.
When the water has evaporated, add the soup stock.
If making fresh soup, keep adding strained top soup to the barley and let it boil until tender.
Finish and serve
Boil the diced celery root and carrots with the barley to improve the flavor.
Serve hot with croutons.
