Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard cooked eggs
Riced eggs thicken the cream and give the sauce a rich, smooth body.
Cream
Adds moisture and richness, helping the sauce stay smooth as it heats.
Butter
Adds fat for a silky mouthfeel and rich flavor.
Parsley
Adds fresh, green aroma and a clean herbal flavor that lightens the richness.

The step that matters

Cook over simmering water, not direct heat. Gentle, indirect heat from a double boiler keeps the cream and egg mixture from overheating, curdling, or turning grainy while it thickens.

Swap the parsley

How well each one fits the dish's main ingredients (egg, cream, butter, nutmeg):

  1. Cinnamonfits better
  2. Tarragonfits about as well
  3. Parsleythe original
  4. Capersfits less well

Fit is the average pairing score against egg, cream, butter, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
