Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the fat into a roux that gives the sauce body.
Chicken fat or butter
Carries flavor and forms the base roux with the flour.
Chicken soup
Provides the liquid that turns the roux into a smooth sauce.
Cream
Adds richness and a silky texture to the sauce.
Egg yolks
Enrich and further thicken the sauce, adding richness and body.
Sherry wine
Adds acidity and a fragrant, mellow aroma to the sauce.

The step that matters

Stir in the egg yolks gently. Egg yolks thicken by gentle heat. If the sauce is boiling when they go in, the proteins can scramble and turn grainy, so keep the heat low and stir steadily.

Swap the peas

How well each one fits the dish's main ingredients (chicken, mushroom, pepper, asparagus, flour, cream, sherry):

  1. Beansfits better
  2. Chestnutfits better
  3. Sesamefits better
