Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Sift the flour into a large bowl.

  2. Mash the hot potatoes into the flour and mix in the butter until smooth.

  3. Add the beaten eggs, salt, sugar, and yeast, and knead well on a floured surface.

  4. Let the dough rise: in summer, at 12 PM; in winter, at 11 AM.

Shape and bake

  1. About an hour before serving, turn the dough onto a floured surface without working it.

  2. Roll the dough out to ½ inch thick and cut into round cakes.

  3. Place the cakes in the baking pan to rise without touching.

  4. Bake at 400 °F (200 °C) for about 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Add moisture and a soft, tender crumb to the dough.
Flour
Provides the main structure that holds the rolls together.
Eggs
Add richness and help bind the dough and set the crumb when baked.
Butter
Adds fat that softens the crumb and gives a richer flavor.
Yeast
Produces gas that makes the dough rise and become light.

The step that matters

Turning the dough without working it. Handling risky dough roughly knocks out the gas bubbles yeast has built up. Gentle handling keeps the air inside, so the rolls stay light instead of dense.

Swap the potato

How well each one fits the dish's main ingredients (flour, butter, egg, coffee, sugar):

  1. Arrowrootfits about as well
  2. Sweet potatofits about as well
  3. Asparagusfits about as well
  4. Potatothe original

Fit is the average pairing score against flour, butter, egg, coffee, sugar. Candidates are from the same food group and used in at least 100 recipes.
