Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the main body of the dish, becoming soft and tender when fried slowly.
Flour
Coats the slices so they brown well and develop a crisp, golden surface.
Butter
Conducts heat in the pan and adds richness and browning to the slices.

The step that matters

Fry slowly until soft and dark brown on both sides. Eggplant is spongy and absorbs fat quickly. Frying over moderate heat lets the flesh cook through and turn tender before the outside burns, while the flour and butter drive browning on the surface.

Swap the eggplant

How well each one fits the dish's main ingredients (pepper, flour, butter):

  1. Shallotfits better
  2. Chivefits about as well
  3. Capsicumfits about as well
  4. Eggplantthe original

Fit is the average pairing score against pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
