The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a firm, sliceable jelly as it cools.
Loaf sugar
Provides sweetness and body, and helps give the set jelly its clear, firm texture.
Lemons
Supply acidity and citrus aroma that balance the sweetness of the jelly.

The step that matters

Dissolving the isinglass fully. Isinglass must dissolve completely in the hot liquid before straining; undissolved pieces leave cloudy spots and weak set. Soaking first softens it so it dissolves evenly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, rose):

  1. Vanillafits better
  2. Orangefits about as well
  3. Raspberryfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, rose. Candidates are from the same food group and used in at least 100 recipes.
