Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten until light, they trap air and give the cream a light, airy body.
Egg yolk
Adds a yellow color and richness to the mixture.
Lemon juice
Provides acidity and a bright, tangy flavor.
Sugar
Adds sweetness to balance the lemon's sourness.

The step that matters

Gently heating the mixture without boiling. Egg proteins thicken as they warm, but boiling can overcook them, causing them to curdle or scramble and leaving a grainy texture. Heating gently until very hot sets the cream smoothly.
