Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the mixture as they gently set with heat, giving the cream its body.
Sugar
Sweetens the cream and balances the sharpness of the lemon.
Lemons
Provide the main lemon flavour and tartness, with peel and juice both contributing.

The step that matters

Heat gently without boiling. Egg yolks set as they warm, but if the mixture boils they can scramble and curdle, leaving the cream grainy instead of smooth.
