What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Granulated sugar
Adds sweetness and helps balance the sharpness of the citrus juice.
Lemons
Provide acidity and aroma, with the grated rind adding fragrant oils.
Oranges
Add sweetness, juice for flavour and fresh fruit sections for texture.
Bananas
Add soft texture and sweetness to the fruit layer.

The step that matters

Pour the jelly when it begins to congeal. If the jelly is still fully liquid, the fruit will sink and float unevenly. If it has set too far, it will not blend with the fruit. Pouring at the thickening point suspends the fruit evenly.

Swap the banana

How well each one fits the dish's main ingredients (sugar, lemon, orange, grape):

  1. Figfits better
  2. Vanillafits better
  3. Cranberryfits better
  4. Bananathe original

Fit is the average pairing score against sugar, lemon, orange, grape. Candidates are from the same food group and used in at least 100 recipes.
